Chicory grows only in the highlands. This crop is harvested while still in the vegetative stage (not flowering). Part that is harvested a whole part of the body located on the ground surface. Chicory called because it's leaves that tend to pale yellow-white leaves and stems. Chicory can be used to pickle (preserved in liquid sugar and salt), in capcay, or in clear soup. Chicory-flavored distinctive but neutral.
